Monthly utility bills show a total, but they rarely explain what happened during a particular shift, service or period of low occupancy. More frequent monitoring can reveal unusual peaks, recurring losses and avoidable consumption. It also helps teams move beyond assumptions. Water: make invisible losses easier to find
Water waste is often difficult to notice until a bill rises or a fault becomes serious. Digital meters, submeters and leak alerts can shorten that delay. Useful indicators may include litres per guest-night, consumption by building zone or a comparison between similar operating days.
Context matters. A high reading during full occupancy is different from the same reading when only part of a property is in use. Staff therefore need the digital skill to compare like with like, investigate anomalies and record what was done. Even a basic spreadsheet can support this process when the data are entered consistently.
Food waste: turn kitchen observations into evidence

In a professional kitchen, digital tracking can record the weight, type and source of waste, such as spoilage, preparation waste, buffet surplus or plate waste.

Accurate data capture: Enter readings consistently, use clear categories and recognise when information is incomplete or unreliable.
Basic data interpretation: Compare periods fairly, identify trends and distinguish a genuine pattern from a one-off event.
Operational problem-solving: Connect an unusual reading with possible causes, then select an action that staff can realistically test.
Responsible data use: Protect personal and commercially sensitive information, limit access appropriately and focus on the data needed for the task.
Transparent communication: Explain results in plain language, state the measurement period and avoid sustainability claims that the evidence cannot support.
A practical four-step routine
The same routine can be applied to energy, water and food waste:
Measure: Choose one relevant indicator and establish a baseline using a clearly defined period.
Understand: Compare the result with occupancy, covers, opening hours or another operational factor that provides context.
Act: Agree on one realistic change, identify who is responsible and record when it begins.
Review: Check the same indicator again, discuss the result with staff and keep, adapt or replace the action.
Start small, learn quickly and scale what works
A hospitality business does not need a sophisticated digital system to begin. One department, one indicator and one short review cycle can provide a credible starting point. For example, a kitchen could measure buffet surplus for two weeks, or a hotel could review overnight electricity use against occupancy. The important elements are a clear baseline, consistent recording and an agreed responsibility for follow-up.
This approach also changes the role of training. Digital competence is not limited to learning how to operate software. It includes asking good questions, interpreting information responsibly, collaborating across departments and communicating results without exaggeration. These are practical green skills as much as digital ones.
